Freeze fresh berries

Ripe berries can be frozen for up to a year, but this will slightly alter their flavour and texture. Place them in a single layer on a baking tray, then freeze. Once frozen, transfer them to an airtight bag or container.

Prep time: 10 minutes
Ingredients:
4 brownies with nuts
200 g frozen berries
½ cup crème de cassis liqueur
1 cup Nestlé Caramel Treat
½ cup cream
Crystallised kumquat jellies or crystallised fruit
Cooking instructions:

Crumble the nut brownies into a tall tumbler. Top with the frozen berries and drizzle with the crème de cassis.

Mix the Caramel Treat with a splash of cream until glossy and smooth. Spoon this mixture on to the berries, top with crystallised kumquat jellies and serve.

Cook’s note: Buy old-fashioned kumquat jellies at dried fruit counters.
