How to:

Peel ginger

The best way to peel fresh ginger is to use a teaspoon. That way you remove the skin and leave the flesh intact. Fresh ginger will keep for a week at room temperture and about a month in the fridge. You can also freeze it if you like.

Ingredients:
2 large firm ripe avocados
150 g firm tofu, drained
1 x 5 cm piece ginger, grated
3 spring onions, chopped, plus extra, shaved, to garnish
1 green chilli, chopped
2 T lime juice
1 T soy sauce
Spring onion, shaved, to garnish
Cooking instructions:

Scoop out the flesh of the avocados and blend with the rest of the ingredients.

Turn into a serving dish and chill to firm. Garnish with spring onion curls.
