How to:

Boil the perfect egg

Place room temperature eggs in a saucepan and fill with cold water, covering the eggs by two centimetres. On a medium to high heat bring to a boil. Turn the heat down. Proceed as follows:

  • For soft-boiled eggs, leave the eggs to stand in hot water for one to two minutes.
  • For medium-boiled eggs, leave the eggs to stand in hot water for two to three minutes.
  • For hard-boiled eggs, leave the eggs to boil for seven minutes. Remove and place in bowl of ice water to prevent the yolk discolouring.

Ingredients:
For the dumplings
1 free-range egg
½ cup buttermilk
60 g sugar
140 g flour
½ t baking powder
3 ripe bananas, thinly sliced
100 g dark chocolate, chopped
60 g blue cheese crumbled
sunflower oil, for deep-frying
For the pistachio dust
50 g pistachio nuts
30 g icing sugar
Cooking instructions:

To make the dumplings: Beat together the egg, buttermilk and sugar. Mix in the remaining ingredients. Heat the oil in a medium-sized saucepan. Drop spoonfuls of the mixture into the oil and fry until golden brown. Drain on absorbent paper then set aside to keep warm.

To make the pistachio dust: Grind the nuts with the icing sugar until fine. Sprinkle over the hot dumplings.

Per serving: 2175.4kJ, 8.4g protein, 32.7g fat, 57.3g carbs
