How to:

Smoke tomatoes

Remove the core from about 40 Rosa tomatoes and score a cross into the top of each.

Scatter some genuine French-oak wine barrel shavings into a pan (just enough to cover the base) and place over a high heat.

Place the tomatoes in a Chinese steamer basket and set over the pan.

When the shavings start to smoke, cover the pan and reduce the heat to medium.

Smoke for 15 minutes, or until the tomato skins start to come away from the flesh.

Remove from the heat and allow to cool, then peel.

Great in homemade tomato sauce and dishes.

Ingredients:
6 organic tomatoes, thinly sliced
180-200 g organic Gouda cheese
a handful of organic pistachios, oven roasted
organic white balsamic vinegar, for drizzling
freshly ground black pepper
sea-salt flakes (optional)
Cooking instructions:

Arrange the tomatoes in rows on four strips of baking paper placed on a grill pan. Interleave the tomato slices with thin slices of Gouda.

Smash the nuts using a heavy pestle and mortar.

Just before serving, slide under a hot grill until the cheese just melts.

Lift each paper onto a plate and, with the help of a spatula, slide the tomatoes and cheese onto the plate. Drizzle with white balsamic vinegar and sprinkle the cracked nuts on top. Season with a twist of pepper and, if it needs it, a few fl akes of salt.

Serve immediately.
