How to:

Store basil

Store freshly cut basil on your kitchen counter in a glass with the water level covering only the stems. Change the water occasionally.

It will keep for weeks this way, even develop roots! Basil hates to be cold, so never put it in the refrigerator.

Prep time: 5 minutes
Ingredients:
200 g raspberries
60 g fresh basil, plus extra to garnish
2/5 cup sugar
3/5 cup rum
4 cups of sparkling mineral water or lemonade
150 ml lemon or lime juice
3 lemons, sliced
Cooking instructions:

Crush the berries, basil and sugar using a pestle and mortar.

Divide the berry mixture between six glasses.

Add a tot of rum, a splash of lemon or lime juice and a few ice cubes to each glass.

Top with sparkling water or lemonade and garnish with fresh basil leaves.
