How to:

Fry bacon properly

Take your bacon out of the fridge 10-15 minutes before cooking so that it is closer to room temperature. Place the bacon in a room temperature heavy-bottomed frying pan (ideally cast-iron) ensuring it is not overlapping. Place the pan over a medium heat and allow the bacon to cook.

Flip the bacon as little as possible, once after about 7 minutes is ideal then remove from the heat and serve once it reaches your desired crispiness.

Ingredients:
12 rashers beech-smoked streaky bacon
100 g baby Rosa tomatoes
1 T olive oil
2 T balsamic vinegar
4 slices seed loaf
2 avocados, sliced
Baby gem lettuce
Mayonnaise
Cooking instructions:

Fry the rashers of beech-smoked streaky bacon in a hot pan until crispy.

In a separate pan, sear the baby Rosa tomatoes in the olive oil until charred, then add the balsamic vinegar and reduce until caramelised.

Top all the slices of seed loaf with the bacon, ripe sliced avocados, baby gem lettuce, good quality mayonnaise and the caramelised tomatoes.
