How to:

Store cheese

Store cheese in your refrigerator, which approximates the temperature of aging rooms. Keep it wrapped tightly in plastic, away from air (which helps mold grow on cheese).

If you get a little mould on the outside, just cut it off. The English say that if mould won't eat your Cheddar it can't taste very good!

Most ripened or aged cheese is low in moisture content and can be frozen without drastic flavour and texture changes. Thaw slowly in the refrigerator for 24 hours or more.

If frozen for several months, the cheese may dry out somewhat and become crumbly when thawed.

Prep time: 15 – 20 minutes
Ingredients:
8 white bread slices
150 g pecorino cheese
2 ripe pears
50 g butter
150 g Camberzola cheese
Salad leaves to garnish
Cooking instructions:

Using a 5cm pastry cutter, cut 16 rounds from bread slices. Slice pecorino lengthwise (about 3mm) thick and use cut out rounds, using the same pastry cutter. Slice pears lengthwise and cut out 16 rounds.

Butter the 16 rounds of bread, top with the pecorino, followed by the pear and finish the canapés with a piece of Camberzola. Decorate with offcuts of cheese and pear and fresh lettuce leaves. Cover with cling wrap.

Refrigerate and serve cold.
