Keep lettuce crisp

Lettuce keeps better if you store in refrigerator without washing first so that the leaves are dry. Wash the day you are going to use.

Prep time: 15 minutes
Ingredients:
4 slim sweet salad peppers, sliced lengthways
1 large or 2 small cos lettuce
6 small crisp cucumbers, sliced lengthways
For the dressing, blend together until smooth and creamy:
1 disc feta, about 75g, crumbled
1/3 cup Greek yoghurt
3 tablespoons olive oil
1 clove garlic, crushed
1/2 teaspoon dried oregano
Milled black pepper
Cooking instructions:

Arrange the pepper slices, cos leaves and cucumber strips on plates or a platter. Pass around the dressing to spoon over each serving.
