How to:

Make the perfect cup of tea

Fill the kettle with fresh water - water that has been boiled has lost some of its dissolved oxygen - and leave to boil. In the meantime, warm the teapot (preferably a ceramic one) by pouring 65ml of water and heating it in the microwave for 1 minute. Discard the water.

Place tea leaves in the pot - use one heaped teaspoon of loose–leaf tea per cup - and pour in the boiling water. (If the water is allowed to cool, it won't effectively release the chemicals in the leaves.) Stir the tea and leave for 3 minutes.

Pour cold milk into your cup before adding the tea. This will prevent the milk proteins from degenerating (which happens if it is heated above 75 degrees Celcius), and the milk will cool the hot tea and not the other way around. Add sugar to taste.

Recipe by: Jaques Erasmus
Serves: 2
Category: Easy / Quick / Gourmet
Prep time: 10 minutes
Ingredients:
250 ml iced tea of your choice, freshly made or tinned
175 ml frozen vanilla yoghurt (or any ice cream of your choice)
1 dessert peach, peeled and sliced
6 blackberries
6 raspberries
For the sesame-seed brittle
250 ml sugar
Butter (or olive oil)
5 ml black sesame seeds
Cooking instructions:

To make the brittle: Melt the sugar in a small, deep saucepan over medium heat, until completely dissolved and starting to turn golden brown.

Do not stir or overheat or the sugar will burn and develop a bitter taste.

Lightly grease a sheet of foil with a little butter or olive oil.

Pour the melted sugar onto the foil and allow it to spread. Sprinkle with sesame seeds and cool.

Carefully peel off the foil. The brittle should be made just before serving or it will melt.

To serve: Divide the tea between cups and top with balls of frozen yoghurt. Garnish with sliced peach, berries and sesame brittle.
