How to:

Keep lettuce crisp

Lettuce keeps better if you store in refrigerator without washing first so that the leaves are dry. Wash the day you are going to use.

Ingredients:
For the wrappings
3 baby gem lettuces
1 packet organic spinach
320 g tortilla wraps
For the fillings
300 g chicken chow mein
250 g crispy chicken with a sweet-and-sour sauce
210 g plum sauce
100 g fresh mini asparagus
120 g mung-bean sprouts
250 g mangetout
30 g fresh coriander
30 g fresh chives
100 g cashew nuts with honey
Cooking instructions:

Wash and dry the leaves.

Heat the tortilla wraps, slice in half and roll, leaving a pocket for the filling.

Heat the chow mein in the microwave and the crispy chicken in the oven as per suggested times on packaging.

Allow guests to select their choice of wrapper: spinach, tortilla or lettuce leaves. Fill with a selection of your choice, roll and dip in plum sauce or sweet chilli sauce.

This is an easy way to entertain, as guests will enjoy assembling their own wraps. Simply place wrappings and fillings on a table, along with cold meats and cheese for those who want to snack while they wrap.
