- Fold pancakes around lemony yoghurt and a dollop of granadilla pulp. Serve with a fruity ice cream.

- Melt a little honey in a frying pan, add a corn wrap and cook until golden brown. Spread with chocolate sauce and scatter with chopped pistachio nuts before folding.

- Caramelise orange segments or pear slices in butter with a sprinkling of brown sugar and a splash of sherry. Spoon onto a pancake and fold into a triangle. Sprinkle over some icing sugar and grill until deliciously gooey.(See pancake recipe at link above).

- Drizzle a little rose-water over sliced strawberries and sweeten with sugar. Use as a filling, along with spoonfuls of melted white chocolate, for warmed tortilla wraps.

- Layer thinly sliced bananas over a sheet of phyllo pastry, then drizzle with caramel and roll up. Brush with butter and bake for 15 minutes, or until golden and caramelised. Serve with vanilla-bean ice cream
