PITAS AND FLATBREADS
Halve a few pita breads (available ready-made from Woollies) lengthways and grill until golden, drizzle over a little olive oil and scatter with sea salt and rosemary. Serve, stacked, with a garlicky hummus topped with a teaspoon or two of sticky-sweet onion marmalade.

Buy a packet of ready-made puff pastry and make a variety of bite-sized tarts that can be filled with whatever you have in the fridge - from steamed spinach and asparagus, crunchy bacon bits, panblistered vine tomatoes, creamy goats’ cheese, smoked trout or pitted black olives.
