Apart from its edible flowers and highly nutritious seeds, pumpkin is loaded with the important antioxidant beta-carotene. Like the Americans, you can create endless yummy ways with pumpkin – just add a spice or a herb or two:
Spiced soup:
Soften an onion in olive oil. Stir in 1 t of curry powder and some crushed garlic. Add 1-2 cups pumpkin and 1 cup of stock. Simmer for 20 minutes, then blend and season. Serve with crisp poppadoms.
Posh pancakes:
Blend 3/4-1 cup pumpkin with your favourite pancake batter (thin down with a little milk or water to a pouring-cream consistency). Serve hot with lots of cinnamon and sugar.
Savoury fritters:
Mix a cup of pumpkin with a beaten egg and enough flour for a suitable dropping consistency. Add a pinch of salt and another of baking powder. Fry spoonfuls of the mixture in hot oil until golden. Sprinkle with dukkah.
