Delicious and nutritious mushrooms are not only gourmet fare, they’re also a superfood with high levels of antioxidants and the only plant source of the “sunshine vitamin”, vitamin D. Here’s how to create quick meals using mushrooms:
Grown-up toast:
Pile a mix of braised mushrooms on a slice of toasted country bread and top with shavings of organic Gouda.
Faster pasta:
Add cream to braised mushrooms and simmer until slightly reduced. Toss with hot pasta and sprinkle with grated Parmesan.
Fab frittata:
Beat eggs and add braised mushrooms. Fry, without stirring, in a mix of butter and olive oil in a medium-sized frying pan. When semi-set, crumble in some feta and sprinkle with snipped chives.
