Sophisticated salad:
Mix wedges of beetroot with balsamic vinegar and olive oil. Season to taste, add soft goat's-milk cheese and tufts of rocket and drizzle with olive oil.
Hot citrussy side:
Heat cubes of beetroot in orange juice, a squeeze of lemon juice, a drizzle of honey and some seasoning. If you like, stir in a spoonful of slaked cornflour and cook, stirring, until lightly thickened and glazed. Serve as a tasty side dish.
Perfectly pickled:
Bring to a boil 1/2 cup vinegar, 1/2 cup water, 1 T sugar, 1 bay leaf, 1-2 allspice, 2-3 coriander seeds and 1/2 t salt. Pour the boiling liquid over 6 sliced beetroot mixed with 1 sliced red onion. Cool before transferring to a jar and refrigerating.
