Simple pasta meals are often the best. Here are 5 super easy and quick ways to make a great meal when you're all out of time.
- Stir-fry a few anchovies with chilli and garlic in a glug of olive oil. When fragrant toss through warm spaghetti, cooked until al dente, and serve scattered with grated Parmesan.
- Mix chopped ripe tomatoes, cubed chorizo and a spoonful of chermoula paste. Stir-fry in a little olive oil and mix with hot, drained penne pasta.
- Pan-fry sliced brown mushrooms in a little butter and garlic, then add a good spoonful of crème fraîche and toss. Use to coat cooked beef or spinach ravioli pockets and serve warm.
- Toss hot, drained fettuccine with basil pesto, steamed green beans and grated pecorino.
- Fry a little garlic in olive oil, then add chopped black olives, canned tuna, a couple of spoons of passata and a few capers. Fold through bowls of steaming gnocchi.
