Five super-fast sauces for gnocchi

Italian gnocchi makes a great base for a myriad of sauces. These are made from a mere handful of ingredients and lift these delicious dumplings to a whole new level.

Woolworths sells ready gnocchi that simply needs cooking in boiling water for 2 minutes. Or, try your hand at making gnocchi at home with our recipe for Seared calf's liver with home-made gnocchi, burnt sage butter and braised red onion.

GREAT SAUCES

THE QUICK Add a dollop of mascarpone to a bottle of heated Italian tomato sauce and spoon over hot gnocchi. Add fresh basil, chilli and a scattering of Parmesan shavings.

THE LUXE Coat hot gnocchi in lemon-chilli butter and serve with flashfried prawns and steamed asparagus.

THE SLOW Mix a cup of cream with two tablespoons of balsamic vinegar. Pour over pan-fried mushrooms and cooked gnocchi arranged in an ovenproof dish. Scatter with Parmesan and bake at 180°C until the cheese is golden brown and bubbling. You could even add slivers of Serrano ham or bacon before baking.

THE HEALTHY Top hot gnocchi with pan-fried garlicky baby tomatoes, ricotta, crushed olives and wild rocket.

THE HEARTY Fry breadcrumbs with garlic and finely chopped anchovies and scatter over hot gnocchi. Top with slices of fried pork sausage, Parmesan shavings and a dash of cream.
