Everybody loves a good braai. Fire it up a notch with our hand-picked selection of new and classic braai dishes.

JUSTIN'S BRAAI RECIPES

First up, our selection of recipes created by TV foodies Justin Bonello and Bill Granger in their Search for Good Food in 2010.

These include a sumptious chicken spiced with coriander done over the flames, and a quite unique (and good party trick) recipe by Justin Bonello using a garden spade to cook a couple of fillets.

If you're up for a good braai, but not that sure how to go about it, read Justin Bonello's braai tricks (there are a couple of pointers for pros too!).

LET'S EAT SOME STEAK!

Steak done over the coals is everybody's favourite. Buy free range if you can, it's healthier for you and better for our planet. Just a note, free range steaks should be cooked over slightly lower heat, or a notch higher away from the coals than regular beef, and hence for a little longer. That way it stays tender and succulent.

Fish is healthy for us, and works excellently over the coals. Try:

Snoek on the braai with strawberry syrup and roasted veg

Yellowtail side on toasted ciabatta

Whole char-grilled salmon trout with lemon infused butter
