Pasella home cook, Charlene Mekel

Charlene Mekel, a Pasella viewer from Durbanville sent in her green quiche recipe - best served with rocket and a tomato salad.

Charlene will be making her Green Quiche recipe live on Pasella on Wednesday, 1 February on SABC2 at 7:30pm.

She is just one of the home cooks taking part in the exciting Pasella Home Cook competition in which viewers get to vote for their favourite new TV foodie. The winning home cook stands to win a R20 000 Woolworths gift card.


CHARLENE MEKEL'S GREEN QUICHE

Ingredients:

For the crust:

  • 1 cup cake flour
  • ½ cup grated hard butter
  • 1 cup grated Cheddar 

For the filling:

  • 1 T butter, to fry
  • 4-5 leeks, chopped into rings
  • 1 large onion, finely chopped
  • 1 head of broccoli, broken into small pieces
  • 4 eggs, lightly whipped
  • 250ml cream
  • 2 T milk
  • 1 T lemon juice
  • ½ t dry or fresh oregano
  • ½ t dry or fresh thyme
  • ½ t sweet paprika
  • Salt and freshly ground pepper, to taste

Method:

For the crust:

Sieve the flour, then rub in the butter and mix in the cheese. Push the crust into a quiche tin or other suitable container.

For the filling:

Heat the butter and fry the leeks and onion till just soft. Add the broccoli and fry a little longer (but not too long, you want to keep it crisp). In the meantime, mix the eggs, cream, milk, lemon juice, herbs and paprika. Season with salt and pepper.

When the leek mixture is slightly cooled, add the egg mixture and dish the filling onto the prepared crust. Bake at 170°C for 40-45 minutes.

Enjoy with a salad.
