Granadillas
Granadillas (“little pomegranate” in Spanish) are also known as passion fruit and are deliciously tart and tropical. When ripe, their skins wrinkle and the pulp can be scooped out, with or without the seeds, and used to balance sweet flavours in desserts and bakes.
They’re really low in calories (16 calories per fruit), and a good source of vitamins A and C, as well as potassium and iron. When eaten with the seeds, they’re an excellent source of fibre and the powdered peel is said to relieve asthma.
Clever ways with granadillas
- Fold thick cream and granadilla pulp into melted white chocolate – the fruit cuts the richness and sweetness.
- Make a curd as you would a lemon curd, but use granadilla pulp instead of lemon juice. Eat it on toast or spooned over pancakes and waffles.
- For the perfect sharp and sweet drink, pour a tot of Southern Comfort over crushed ice and add fresh lime juice and granadilla juice.
- Granadilla juice is excellent for marinating venison
