Baby marrow / Courgette
 
Named marrow by the English, this squash is also known as courgette in French and zucchini in Italian.
 
Zucchinis are mostly water and some carbohydrate, but they also contain Vitamin C, folate and zinc.
 
Colours range from dark green to yellow - the darker the squash the more nutrients. The smaller ones have the most flavour.
 
They can be stored unwashed in a plastic bag in the refrigerator for up to four days.
 
Baby marrows can be used in appetizers, salads, soups, vegetarian main dishes, meat main dishes, sides and breads, or can be pickled, preserved, or frozen for later use.
 
They pair well with tomato, garlic, onion, herbs and spices, with aubergine, in ratatouille, au Gratin, in any type of casseroles, in curry, Tex-Mex and pasta dishes.
 
They are so versatile: they can be baked, blanched, deep-fried, grilled, roasted, sautéed, stir fried and steamed.
