Sweet potatoes
Like all vegetables, sweet ppotatoes are low in fat and contain potassium and betacarotene that's converted in the body to viamin A, and important antioxidant helping your immune system function optimally.
They also have a low GI, which means that when you eat them, the sugar in the sweet potato is released gradually, helping to stabilise blood sugar levels.
Sweet potato flour makes a delicious gluten-free bread. Look for it at health shops or try our recipe for sweet potato bread.
SWEET TIPS
- Before storing sweet potatoes, get rid of any bruised ones as they won't last well.
- Store them in a dry, dark, cool place - never in the fridge.
- When you've cleaned and peeled them, place them immediately into a large bowl of water with squeezed lemon juice, until needed.
