Mango
 
The mango, the King of Fruits, comes in some 1 000 varieties and is a nutritional powerhouse. It’s a great anti-oxidant, relieves asthma and digestive problems and protects the heart and liver. One mango provides 40% of your daily fibre needs.
 
Choose mangoes that are soft to the touch and have a sweet, fragrant aroma. Plump mangoes are generally less stringy. Store unripe mangoes overnight in a brown paper bag to speed up ripening. Keep in a cool place.
 
Clever ways with mangoes
 
  • Sear scallops in a hot pan and serve on a bed of mango slivers, topped with chilli, lime and coriander dressing.
  • Blend 3 cups yoghurt, 1 cup water, 1 cup mango pulp and 100 g sugar. Pour into chilled glasses and add ice cubes for the perfect mango lassi.
  •  Rub crushed pistachios onto fillet steak and marinate with olive oil and lemon juice. Pan-fry to your preference, then slice and stuff into pita breads or wraps along with chunks of mango, sliced salad onions and spicy yoghurt.
  •  Gently poach chicken breasts, then cut into cubes and thread onto skewers together with slices of ripe mango. Serve drizzled with lime-and-palm-sugar syrup.
