Make pizza bases
Making your own pizza bases is a great way to keep the kids entertained and into the kitchen. That way they’re busy and they have something to eat at the end of it all! A great idea is to make a pile of pizza bases and freeze them, simply whip out of the freezer and top them with your favourite.
Ingredients:
- 1.4 kg cake flour
- 1 T salt
- 1 ½ Tsugar
- 4 x 7 g sachets instant dry yeast
- 4 T olive oil
- 1 litre warm water
Method:
Sift the flour and salt into a large plastic bowl. Add the sugar and yeast.
Mix the oil and water and add to the flour. Mix to form a soft dough.
Turn out onto a large lightly floured surface and knead for 10 minutes until smooth.
Grease the bowl, add the dough, cover and place in a warm place to rise for about 30 minutes, or until doubled in size.
Knock down with your fist (a slight punch) and knead until smooth.
Divide into about 10 to 12 balls and roll out thinly on a floured surface. Layer the pastry discs between cling wrap and freeze.
To use, brush with olive oil, sprinkle with dried oregano, spread with crushed canned tomatoes, garlic and salt and add your favourite toppings.
Finish off with grated mozzarella. Bake at 200°C until the base is golden brown and the cheese is bubbling.
Cook’s note: I keep packets of grated mozzarella in the freezer so it’s always on hand.

- Lean ham and roasted baby tomatoes with rosemary or rocket
- Roast brinjal, marinara and fresh basil
- Black mushrooms, thyme and roasted red peppers
- Smoked chicken, Peppadews and harissa paste
- Artichoke, basil and edam cheese with Madagascar green peppercorns
