HARD CHEESES
Creamy Lancashire
This traditional creamy cheese from England has a full-bodied, slightly salty flavour. The flavour intensifies as it matures and it is best eaten around three months of age.
Try it in Cheesy breakfast tarts
Drunken Pecorino
Made exclusively for Woolworths, heads of pecorino cheese are immersed in grape must for up to 24 hours, to allow the fermented tang to permeate the cheese.
Try it in Whole-pea risotto with drunken Pecorino and oven-dried pancetta
Grana Padano
Grana Padano is a hard, grating cheese from Italy. It tastes fresh, fruity and sweet, and is matured for 18 months. Use as you would Parmesan.
Try it in Grilled Parmesan, date and pineapple skewers.

SEMI-HARD CHEESE
Appenzeller
Typically only 4 wheels of this cow's milk cheese are made per day at origin in Switzerland. A herbal brine is applied to the wheels of cheese as they mature, imparting a slightly fruity flavour and promoting the formation of a rind. It's one of the cheeses most used in Swiss fondue.

Boerenkaas
This traditional Dutch-style Gouda is made from a blend of Jersey and Frisian milk at the foothills of the Suurberg. It is matured for 3 months and has a wonderful creamy taste and mild flavour. It's perfect for everyday use, such as in sandwiches, and can take heat better than gouda. Also look out for their boerenkaas with cumin, that is mildly spicy.
Try it instead of gouda in Grilled organic gouda and tomato with white balsamic vinegar and pistachios
Goat's milk crottin
Crottin, which is originally from France, is made from goat's milk. It's a semi-hard textured cheese, with a fresh flavour and slightly strong aftertaste.
Crottin means 'dropping', which perfectly describes the appearance of this small cylindrical cheese. A blue-grey mould may develop on the outside as it matures.
Try it in Crottin stuffed with figs and honey

SOFT CHEESE
Chevin
This handcrafted fresh goats’ milk cheese is made to a family recipe exclusively for Woolworths. It has a characteristic “citrus” flavour. Try it in Roasted asparagus and chevin tarts.

Try it in Slow-roasted leg of lamb with salad and vegetables.
Classic Brie
This award-winning traditional handcrafted Brie is made exclusively for Woolworths. It is produced using full cream, single herd Jersey milk. It is ripened for a minimum of 5 weeks to give a creamy texture and rich, savoury flavour.
Try it in Cheesecake with cranberry or Roasted balsamic pear, pecan nut and brie tart
Goat's milk Camembert
Made exclusively for Woolworths from a blend of goat's milk and Jersey cow's milk. A traditional camembert with a soft smooth texture and distinctive flavour. Try it in Grilled mushroom, beetroot and cheese sandwiches.

Blue Rock
A blue veined cheese made ‘roquefort style’ with a full flavour and creamy texture. Matured for 3-4 months. Try it in Frozen yoghurt and blue cheese sandwich 
Cambozola
A traditional style fully ripened Camembert with a blue vein adding a subtle piquant flavour to its rich, creamy texture.
Try it in Chocolate, banana and blue cheese dumplings with pistachio dust
Cashel Blue
Made in Cashel, County Tipperary in Ireland, this is one of the country's few blue cheeses. This soft, silky and creamy blue cheese with green – blue marbling has a medium flavour and is not as salty as other blue cheeses.
Try it in Blue cheese and roasted leek tart

FRESH CHEESES
Woolworths' low fat Aubergine and feta cream cheese This fabulous cheese just won a bronze at the World Cheese Awards 2010. It's delicious spread on toasted farmhouse loaf, with crackers or as a dip with vegetable crisps.
Halloumi
Made from sheep’s milk, Haloumi is a creamy white cheese with a somewhat fibrous texture, generally less salty than Feta, even though it is soaked in brine during processing.
Try it in Grilled split pitas with hummus, haloumi and avocado
Ricotta
Made from whey, a by-product of other cheese making. It is a fresh cheese, white in colour, with a bland flavour and a fine, granular, moist consistency.

Duetto Dolce
Decadent fresh mascarpone, layered with figs & pecan nuts.
