Black-eyed beans or peas

Black-eyed beans are small, white beans with a black mark, used in southern American cooking and in Latin America. They're also known as black-eyed peas.

Try them in black-eyed bean and mango salad or Blue cheese, bulgur, quina and herb croquettes with pickled pears and bean-and-pecan nut salsa.
