Mock ParmesanMock Parmesan or vegetarian Parmesan is a cheese substitute favoured by vegans and vegetarians. Sometimes it will be made with vegetable rennet instead of animal rennet, which is fine for those only avoiding animal products. Vegans would use a mix of ground cashew nuts, sesame seeds, onion powder, garlic powder, paprika, herbal salt, ground celery seeds, dried vegetable stock and lecithin powder to create the same mock cheesy flavour.
