Jerk

Jerk is firstly a Jamaican preparation method in which meats and poultry are marinated in herbs and spices, then cooked over a pimento (allspice) wood fire. Jerk seasoning is more familiar and is a spicy mix of chiles, salt, ginger, cinnamon, allspice, thyme, and lime juice or rum. It's used to marinate fish, pork, chicken, and beef.
