Glossary
JambalayaJambalaya is a combination of meat or seafood and rice cooked together, similar to Spanish paella. Most common is Creole jambalaya, also called "red jambalaya and often created with the addition of sausages. It's followed by Cajun jambalaya from southwestern and south-central Louisiana in the USA, which contains no tomatoes.
