Glossary
AsafoetidaAsafoetida is also known as Hing in Hindi and Devil's Dung in English. The name actually comes from Latin for 'stinking' and it's certainly pungent on its own. But used in cooking, it softens and adds garlic and onion like flavour. In India it is routinely added to lentil and bean dishes as it is reputed to prevent and alleviate flatulence.
